Chocolate Chip Bars Stuffed with Cheesecake


  • – 30 ounces Pillsbury cookie dough, divided
  • – 8 oz cream cheese, room temperature
  • – ½ cup sugar
  • – 1 egg

– ½ teaspoon vanilla extract


  • 1. Preheat your oven to 350 degrees Fahrenheit.
  • 2. Line a 9×9 inch baking pan with nonstick foil, and press half of the cookie dough into the bottom of the pan to form the base layer.
  • 3. In a mixing bowl, beat together the cream cheese, sugar, egg, and vanilla extract until smooth to make the cheesecake layer.
  • 4. Pour the cheesecake mixture over the cookie dough base in the pan, spreading it out evenly.
  • 5. Flatten the remaining cookie dough and place it on top of the cheesecake layer, covering it as best as possible.
  • 6. Bake in the preheated oven for 35 minutes, or until the cheesecake layer is set.
  • 7. If the bars are browning too much, cover them with foil while baking.
  • 8. Allow the bars to cool to room temperature, then chill them in the refrigerator until cold before cutting into squares.
  • 9. For an extra touch, drizzle melted chocolate over the bars before serving, if desired.
