Cheesy Taco Rice

This Cheesy Taco Rice is a delicious and easy one-pot meal that’s perfect for busy weeknights. With savory ground beef, flavorful spices, and gooey melted cheese, it’s sure to be a hit with the whole family. Serve it as is or over crunchy Nacho Cheese Doritos for an extra tasty twist!

Ingredients:

  • – 1 pound Ground Beef
  • – ½ Yellow Onion, chopped
  • – Salt and Pepper, to taste
  • – 1 tsp Onion Powder
  • – 1 tsp Garlic Powder
  • – 1 packet Taco Seasoning
  • – 2 cups Beef Broth (or water)
  • – 1.5 cups Minute Rice
  • – 10 oz Rotel
  • – 2 oz Diced Green Chilies (half a small can)
  • – 10 oz Enchilada Sauce
  • – 2 cups Cheddar Cheese, shredded

Directions:

  • 1. In a large saucepan, brown the ground beef with the chopped onion until the onions are translucent and the beef is cooked. Drain off any excess grease and return the beef mixture to the pan.
  • 2. Add the salt, pepper, onion powder, garlic powder, and taco seasoning to the beef mixture. Stir well to combine.
  • 3. Pour in the beef broth (or water), followed by the Minute Rice.
  • 4. Add the Rotel and diced green chilies to the saucepan. Stir everything together and bring to a boil.
  • 5. Reduce the heat, cover the saucepan with a lid, and let it cook for 5 minutes.
  • 6. After 5 minutes, pour the enchilada sauce over the mixture and sprinkle the shredded cheddar cheese on top. Cover again and let the ingredients melt for an additional 5 minutes.
  • 7. Once the cheese is melted and everything is heated through, serve the Cheesy Taco Rice warm.
  • 8. Enjoy as is or over Nacho Cheese Doritos, tortilla chips, and with your favorite toppings such as salsa, sour cream, lettuce, and green onions.
