Best Ever Blueberry Cookies

These Best Ever Blueberry Cookies are a delightful treat bursting with fresh blueberries and creamy white chocolate chunks. Soft and chewy, with a surprise cream cheese and blueberry jam filling, these cookies are sure to become a favorite for any occasion.

Ingredients

  • For the Cookies:
  • 1 ½ cups all-purpose flour
  • 1 teaspoon cornstarch
  • ¼ teaspoon salt
  • ¾ teaspoon baking powder
  • ½ cup unsalted butter
  • ¾ cup sugar
  • 1 egg
  • 1 teaspoon vanilla
  • 4 oz. white chocolate, chopped into small chunks
  • ¾ cup blueberries
  • For the Filling:
  • 2.5 oz. cream cheese, softened
  • 1 tablespoon powdered sugar
  • ½ teaspoon vanilla
  • 3-4 tablespoons blueberry jam

Directions

  • In a small bowl, whisk together the dry ingredients: flour, cornstarch, salt, and baking powder. Set aside.
  • In a large mixing bowl, cream together the butter and sugar on high speed for about 2 minutes, until light and creamy. Add the egg and vanilla, and mix to combine.
  • With the mixer on low speed, gradually add the dry ingredients mixture and mix until just combined.
  • Fold in about ¾ of the white chocolate chunks, reserving the remaining chunks to press on top of the cookies.
  • Gently fold in the blueberries with a rubber spatula, being careful not to break the berries. The dough will be thick and sticky. Cover and refrigerate for 2 hours.
  • To make the filling, mix together the softened cream cheese, powdered sugar, and vanilla until smooth. Place in the fridge until ready to use.
  • When ready to bake, preheat the oven to 350°F (175°C) and line baking sheets with parchment paper.
  • To assemble the cookies, scoop one heaping tablespoon of cookie dough and make a deep bowl. Fill with 1 teaspoon of the cream cheese mixture and about ¾ teaspoons of blueberry jam. Top with another ½ tablespoon of cookie dough and seal any openings. Roll gently to form a ball. Press a few white chocolate chunks on top and sides of each cookie.
  • Before baking, freeze the cookie balls for 10 minutes. Arrange them onto the prepared baking sheets, leaving 3 inches apart to allow for spreading during baking.
  • Bake for 16-18 minutes, until the edges are lightly golden. Cool on the baking sheet for 10 minutes, then transfer to a wire rack to cool completely.
