Air Fryer Chicken Quesadilla

Savor the classic Chicken Quesadilla made in the air fryer, with a homemade Taco Bell quesadilla sauce! Crispy, cheesy quesadillas filled with tender chicken, melted cheese, and zesty sauce for a flavorful kick. Quick and easy for a tasty lunch or dinner the whole family will enjoy.


For the Taco Bell Quesadilla Sauce:

  • – ⅓ cup mayonnaise
  • – 2 teaspoons minced jalapeños
  • – 2 teaspoons jalapeño juice
  • – ¼ teaspoon garlic powder
  • – ⅛ teaspoon cayenne pepper
  • – ½ teaspoon paprika
  • – ½ teaspoon sugar
  • – ½ teaspoon cumin
  • – ¼ teaspoon salt

For the Chicken Quesadilla:

  • – 1 pound cooked chicken (roasted/grilled or shredded)
  • – 5 burrito flour tortillas
  • – 3 slices American cheese
  • – 2 ½ cups shredded Cheddar & Monterey Jack cheese, divided
  • – Olive oil spray


  • 1. To make the Taco Bell Quesadilla Sauce, combine mayonnaise, minced jalapeños, jalapeño juice, garlic powder, cayenne pepper, paprika, sugar, cumin, and salt in a small mixing bowl. Stir until well combined. Set aside.
  • 2. Lay open one tortilla on a flat surface. Place half a slice of American cheese on one half of the tortilla, lengthwise. Top the American cheese with 1/2 cup of shredded cheese.
  • 3. Place cooked chicken on top of the cheese.
  • 4. Thinly spread approximately 1 tablespoon of Taco Bell quesadilla sauce on the opposite side of the tortilla.
  • 5. Fold the tortilla closed and cut in half.
  • 6. Lightly spray the quesadilla with non-stick spray or mist with olive oil. Place it in the air fryer (the number of quesadillas you can fit will depend on the size of your air fryer). Depending on your air fryer, you may need to weigh the tortilla down so it doesn’t come apart while air frying. Make sure whatever you use is air fryer safe (like a ramekin), or toothpicks will work.
  • 7. Cook at 370°F for 3 minutes, flip, and cook for another 2 minutes, or until the cheese is fully melted.
  • 8. Repeat as necessary for additional quesadillas.
  • 9. Serve hot with sour cream and salsa on the side.
