Buckeye Brownie Cookies

Ingredients:
- – 8 oz bittersweet chocolate, chopped
- – 2 tablespoons unsalted butter, room temperature
- – 2 eggs
- – ½ cup + 2 tablespoons granulated sugar
- – ½ teaspoon vanilla extract
- – ½ cup all-purpose flour
- – ¼ teaspoon baking powder
- – 1 cup creamy peanut butter
- – 1 cup powdered sugar
- – 4 oz semisweet chocolate
Directions:
- 1. Preheat the oven to 350°F and line two large baking sheets with parchment paper.
- 2. In a heatproof bowl set over a saucepan of barely simmering water, melt the butter and bittersweet chocolate together, stirring occasionally until smooth.
- 3. In a medium bowl, stir together the eggs, vanilla extract, and granulated sugar. Set aside.
- 4. In another bowl, whisk together the flour and baking powder.
- 5. Add the melted chocolate mixture to the egg mixture and stir to combine.
- 6. Slowly add the dry ingredients to the wet ingredients, stirring until well incorporated.
- 7. In a separate bowl, mix together the peanut butter and powdered sugar until combined. Roll the mixture into 24 balls and set aside.
- 8. Scoop about 1 1/2 tablespoons of cookie dough onto the prepared baking sheets. If the batter is too thin, chill it in the fridge until firm enough to handle.
- 9. Bake for 10 minutes or until the cookies are firm on the outside, being careful not to overbake.
- 10. Once baked, press a peanut butter ball lightly into the center of each cookie. Allow the cookies to cool for 5 minutes in the pan, then transfer them to a wire rack to cool completely.
- 11. Melt the semisweet chocolate and spoon it over the peanut butter centers of the cookies.
